This was a request by my friend, Crissy. I forgot all about this recipe, and realized I never posted it up on here. Whoops! :)

This comes together VERY quickly, and the best part  – it’s made with things that I always have on hand. It’s a great go to meal when you’re in a hurry. REALLY filling, too!

Low Carb Chicken Alfredo

 

Ingredients:

  • 1 tsp. minced garlic
  • 4 large boneless, skinless chicken breasts
  • 1 cup heavy whipping cream
  • 2 tbsp. cream cheese
  • 4 ounces shredded parmesan cheese
  • 2 cups fresh baby spinach

Preparation:

Cut chicken breast into bite size pieces. Saute over medium heat in olive oil and butter. Once about halfway cooked, add in your teaspoon of minced garlic (I just run a few cloves through my garlic press right into the pan). A Microplane will also make quick work of our garlic!  Season with salt and pepper to taste. Once the chicken is done, spoon out into a bowl and set aside.

Bring the heat down to low. In the same pan (no need to wash! Save the garlic and the flavor for the sauce!!), add in your cream cheese. Let it soften over low heat. Once that’s done, add in your cream and stir to thoroughly combine. Once that’s done, add in your parmesan cheese. Add your chicken back in, and stir to coat in your sauce. Last, in goes the spinach. It will cook down quickly, even over low heat, so keep stirring and keep an eye on it. Let it cook down to whatever your preference is.
